Would a mac book serve good for editing video?

The graphics card on the Macbook is the weak link for using any pro apps. with it. Look at the system requirements for the graphics on the programs you want to use. I know that one can't run Final Cut Studio with the Macbook. I agree with the others, a MBP would be better but if you can't afford one and you don't need the portability of a MB, an iMac would do everything you want. I've read mixed opinions about the glossy screen of the Aluminum iMac for use as a photo editor though.
